Cardomom Truffles

These little bites of bliss take the classic truffle to a whole new level. Sweet, rich tones of decadent cashew butter, crunchy coconut and perfectly spiced with exotic cardamom. I wouldn’t be exaggerating if I said these little dessert balls are somewhat addictive!
Cardamom is traditionally used in Indian and Middle Eastern cuisine, as well as being used medicinally to treat digestive issues, inflammation and nausea.

1 C almond meal
1 C desiccated coconut
2 T coconut oil
1/2 C cashew butter
3 T organic honey
1/2 C crushed pistachios
1 T cardamom powder
1/2 t sea salt

Combine all the ingredients in a large mixing bowl, and thoroughly combined to all is well incorporated. Place mix in the fridge for an hour or so to firm.

Remove from the fridge and roll 1 teaspoon of mixture into little balls, and place on a plate or tray. Refrigerate again for at least 30 minutes before enjoying every mouthful of these unique and delicious truffle delights.
